Weekly Meal Planning on $60 or less: Guinness Beef Stew

0

Beef stews, cornish hens, and warm dips, Oh my! The weather is chilly and the food needs to be filling. Plus I am so excited! I finally got a chest freezer so I have tons of room to store meats that I find on sale. Yah! Bring on the beef!

This is my weekly meal plan on $60 or less! (my average prices do not include common spices, butter, oil, etc)

Monday

Asian Steak Tips (@$8)asian-steak-bites

  • Sirloin Tip Steak $5.47
  • Vegetable Fried Rice $2.29

I have made buttered steak tips a few times, but I was looking to try a little different flavor this time with more zip. You can up the heat factor easily by adding a little more chili paste, but start out slow and add if you need it, a little goes a long way. (recipe)

Tuesday

cornish-henMediterranean Cornish Hens (@$14)

  • Cornish Hens $7.41
  • Lemon $0.79
  • Onion $0.69
  • Israeli Couscous $3.19
  • Zucchini $0.98
  • Honey $0.69 (¼ container)

Absolutely delicious! I am not usually a fan of the larger couscous texture, but mixed with the zucchini it gave the dish a different texture and some color. It is on my list to make again very soon. (recipe)

Wednesday

Chicken French Dip (@$15)chicken-french-dip

  • Chicken Breast $5.50
  • Onion $0.69
  • Hoagie Buns $2.49
  • Provolone Cheese $2.29
  • Fries $1.99
  • Chicken Stock $1.79

I was looking for something a little different to feed a lot of people. This was yummy and it came out quite tender even though not very colorful. Next time l probably will add roasted bell peppers for a little pop of color and some veggies. (recipe)

Friday

Guinness Beef Stew (@$20)

  • Stew Meat $11.98
  • Red Potatoes $1.34
  • Carrots $0.69
  • Celery $0.20
  • Onion $0.69
  • Tomato Sauce $0.67 (8oz cans x2)
  • Beef Broth $1.13 (½ container)
  • Onion Soup Mix $0.59
  • Guinness $2.50(1 bottle)

Everyone was so hungry, I completely forgot about taking pictures. Whoops! Bad Blogger, lol. It made plenty of food and enough for leftovers the next day. Basically $10 per meal for a family. (recipe)

Saturday

Leftover beef stew, because it’s just as amazing the second time and it’s already cooked! Heat and serve, easy peasy ya know?

5 meals for under $60

**Bonus** I am big fan of dips for feeding a group and anything that involves beer, cheese, and bacon is definitely a win in my book. Plus warm dips are great for cold nights and football season. Dig in folks! (recipe)
