Using the crockpot and breakfast (just not together)

So I was feeling a little under the weather this week, so we tend to have a little more prepackaged foods. Crescent rolls, biscuits, stuffing, gravy. It happens. I still stayed in about the same price range, however I spent closer to $190 this week. I tend to only go to Fresh Market maybe once or twice a month for ground beef and chicken.

This is my week. I do not follow my list 100% and tend to grab neat snack or lunch items as I see them. As a reminder, meal prices do not include spices, butter, oil, etc.

Monday

Breaded Pork Chops with Stuffing (@$10)

  • Boneless Pork Chops $5.87 (8 chops)
  • Green Beans $0.50
  • Crescent Rolls $1.69
  • Stuffing $1.59

Homemade Shake N Bake breaded pork chops (breadcrumbs, italian seasoning).

Tuesday

Gnocchi & Bacon (@$8.50)

  • Gnocchi $2.19
  • Bacon $0.87 (1lb for 6.99 BOGO, Fresh Market)
  • Belgian Endive $2.89
  • Parmesan $2.25
  • Onion $0.30

This recipe is quite filling as gnocchi is quite dense. I have been thinking about using spinach next time to change it up. This can also be used as a side if you needed a larger meal.

Wednesday

Meatball Subs (@$12)

  • Ground Beef $4.25 ($2.99 lb, Fresh Market)
  • Hoagies $1.95
  • Cheese $1.60
  • Sauce $1.59
  • Pasta $0.50 (for homemade pasta salad)
  • Bell Pepper $0.50 (half, for pasta salad)
  • Olives $0.59 (half, for pasta salad)

Crockpot!! This can be done two ways. 1. Make meatballs and put in crockpot for 8 hours or 2. Make meatballs and bake in 425 for 20 minutes and then in the crockpot for up to 3 hours on low. Basic recipe for meatballs here. I follow something similar, just with less breadcrumbs. Pasta salad is just cooked pasta, olive oil, Italian seasoning, salt, dice bell pepper, parmesan, & olives.

Friday

Breakfast (@$8)

  • Eggs $1.68 ($0.28×6)
  • Bacon $3.50 (Fresh Market)
  • Canned Biscuits $1.68
  • Gravy $0.89

Scrambled eggs, bacon (cooked in the oven). Sometimes I do scratch biscuits and gravy, this week was canned biscuits and a gravy packet due to a temper tantrum prone toddler.

Saturday

Chicken Taco Bowls (@$11)

  • Rice $0.94 (½ box, boil in bag)
  • Chicken Breast $3.81 (Tuesdays from Fresh Market, $2.99 lb)
  • Corn $0.89
  • Black Beans $0.99
  • Shredded Cheese $1.25 (half bag)
  • Sour Cream $0.75 (⅓ )
  • Avocado $0.99
  • Bell Pepper $0.50 (½ )
  • Taco Seasoning $0.57

Saute chicken with taco seasoning. I set up a taco bar and let everyone add what they want to the bowl.

5 meals for around $50.

The rest of my food budget this week went to 2 bottles of prosecco, lots of coffee, cookies, and quite a few apples and bananas. I manage to be quite cost effective on my dinners but still tend to be a little extravagant on snacks. Yogurt, fruits, hummus, yummy coffee creamer. I splurge in other areas and am currently attempting to cut back there too.
