Weekly Meal Planning on $60 or Less: Maple Glazed Salmon

0

Surf and turf, it’s the best of both worlds. Steak and maple glazed salmon are on the menu this week, and they won’t disappoint. And it was all on sale, major bonus points. We also have an amazing copycat soup from Olive Garden and baked chili dogs for the days you just don’t have time to cook. Or you just don’t want to. Basically days that end in y.

This is my weekly meal plan on $60 or less! (my average prices do not include common spices, butter, oil, etc)

Monday

Baked Chili Cheese Dogs (@$8)

  • Hot Dogs $2.99
  • Chili $1.99
  • Buns $0 (Free with hotdog purchase)
  • Shredded Cheese $0.83
  • Fries $1.99

(recipe) This is a super quick and easy meal that toddlers love. Mommy’s love it because its easy peasy and cheap! Add some baby carrots and ranch dip for a healthy side if you just can’t fathom a dinner sans veggie.

Tuesday

Pork Roast with Squash Casserole (@$9)pork-and-squash-casserole

  • Pork Roast $3.99
  • Green Beans $0.69
  • Squash $2.03
  • Egg $0.16 ($0.08 x2)
  • Onion $0.56
  • Ritz Crackers $0.31
  • Cheddar Cheese $0.83
  • Milk $0.25

(recipe) Since there wasn’t much to cooking the pork roast (350 for an hour), I decided to make a fun side dish. Southern squash casserole is absolutely delish and a major comfort food crowd pleaser.

Wednesday

gnocchi-soupCreamy Chicken Gnocchi Soup (@$12.50)

  • Chicken Breast $3.27 ($2.99lb, Fresh Market)
  • Gnocchi $2.49
  • Onion $0.56

  • Celery $0.23
  • Chicken Broth $1.79
  • Milk $0.51
  • Cream $0.67
  • Spinach $1.99

(recipe) This is a copycat from an Olive Garden soup i just love and it did not disappoint! Lots of veggies and creamy gnocchi make this a crowd pleaser and it feeds an army.

Friday

Maple Glazed Salmon (@$13.50)maple-salmon

  • Salmon Filets $9.58
  • Rice $0.40
  • Asparagus $3.29

(recipe) This glaze makes any fish hater change their tune. You know the ones, they turn their nose up at the mere mention of fish. Try this glaze on them and hear their tune change.

Saturday

flat-iron-steakFlat Iron Steak (@$13.75)

  • Flat Iron Steak $8.51
  • Potatoes $0.66
  • Brussel Sprouts $3.99
  • Parmesan $0.51

(recipe) I love the taste of brussel sprouts, but they make the house smell like a paper mill. If you don’t know what that smells like, thank your lucky stars. These potatoes come out nice and crispy with a light seasoning and go perfectly with the steak.

5 meals for under $60

**Bonus**

Around this time of year I usually start to feel sluggish and bloated and sometimes a little down in the dumps. This drink is a little pick me up. And no, it is alcohol. Golden Milk is considered to be an anti-inflammatory, antioxidant, & antidepressant.
